Sorry that it’s been awhile. I wish there was more time in the day for crafts. I made one of my favorite cookies for my sis-in-law Meghan today, pumpkin walnut. That are soft and super fab. I thought since cooking is another thing I love that I’d share the recipe.
PUMPKIN-WALNUT COOKIES
Yields 3 dozen
1 cup butter, softened
2/3 cup firmly packed brown sugar
1/3 cup sugar
1 cup cooked pumpkin
1 egg
1 tsp. vanilla
2 cups flour
1 ½ tsp. pumpkin pie spice or cinnamon
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup chopped walnuts
FROSTING
2 cups powdered sugar
1/4 cup butter, softened
4 oz. of cream cheese, softened
1 tsp. vanilla
1/4 tsp. pumpkin pie spice or cinnamon
walnut pieces
Heat oven to 350 degrees. Beat together butter, brown sugar, and sugar until creamy. Add pumpkin, egg, and vanilla and mix well. Continue beating on low while adding the rest of the ingredients except the walnuts. Hand stir in the walnuts. Bake for 10 to 12 minutes. Combine all frosting ingredients (except walnuts) and beat on low. Garnish with walnut pieces.
